If you leave the steam within the oven, the chips will normally come out slightly chewier than intended. It really can&#39;t hurt too much, though, to leave it closed. I think if you keep the steam within the oven by keeping the door closed they will come out slightly chewier than intended. These are going to be kind of chewy.
