Best Ever Banana Cream Pie (Recipe)

No, it didn't earn the title based on its appearance.

In fact, the pie was especially messy because I forgot to press down the crumbs on the bottom of the pan.  I also tried to cut a slice before it was completely set.  But wow, it tastes so, SO good!

Best-Ever Banana Cream Pie

Make the crust:
  • 1-1/2 cups graham cracker crumbs (20 squares)
  • 1/3 cup butter, melted
  • 3 tablespoons sugar
Mix together (I did this right in the pie plate), then press in the bottom and up the sides of the pie plate.  Bake at 350 degrees F for about ten minutes.  Let cool.

Make the filling:
  • 1 pkg (4-serving size) vanilla instant pudding mix
  • 2 cups milk
  • 1 cup heavy cream
  • 1/4 cup confectioners sugar
  • 1 teaspoon vanilla
Prepare the pudding as directed, using 2 cups milk.  In a separate bowl, whip heavy cream to soft peaks.  Beat in the confectioners sugar.  Fold the whipped cream mixture into the pudding.

Assemble the pie:
  • 1 or 2 bananas, sliced about 1/4" thick
Spread a thin layer of filling in the bottom of the cooled crust.  Arrange banana slices on top, then pile on the remaining filling.  Cover lightly with plastic wrap and chill for several hours.
