Family Favorite Salad Recipes

I guess I don't make a lot of different salads, but we have a few tried-and-true favorites. Here are a few of my family's favorites:
My all-time favorite just might be Hot German Potato Salad. With all that bacon, it's a stretch to call it a salad.  But let's go with that, okay?  It's worth it just for the aroma of onions cooking in bacon drippings.
When this Italian Pasta Salad is made with cheese tortellini, fresh mozzarella, roasted red peppers, and fresh tomatoes, I could eat just that for most of the summer.  The beauty of the recipe, though, is that you can swap most of the ingredients in or out, so you can use what you like and what you have on hand.
Years and years ago, I found a recipe for Marinated Slaw on an online message board.  I made a number of changes--increasing the variety of vegetables and decreasing the sweetness of the dressing--to arrive at a salad that my family loves.  Some of us (ahem) don't care for mayonnaise, but this is a recipe that pleases everyone.
Ah, Cucumber Salad!  I learned this recipe from my mother-in-law.  It's easy to make, light and refreshing, and fat free.  When we have an endless supply of cucumbers from the garden, we eat this at least four days a week.
Finally, our Cucumber Tomato Salad is sort of a variation on the above.  I do use a little oil in the dressing, but it's still a fresh salad that tastes great when tomatoes are in season.


  1. I love cucumber salad but we always add tomatoes to that recipe. I also love Overnight Salad which has a creamy base with lettuce, cauliflower, and bacon as the main ingredients.
