Menu Plan Monday - Week of April 5

Menu Plan Monday logo

Whew!  We spent the weekend celebrating Easter and visiting family.  It's all good, but I'm tired!

This week our menu is centered around using ham (free from a supermarket promotion) and hard-boiled eggs (from Easter).  Two days of ham will be more than enough; whatever is left--plus the bone--will be frozen for another week.

Monday:  Pasta with garlic, olive oil, and broccoli; salad
Tuesday:  Ham, parsleyed potatoes, steamed carrots
Wednesday:  Egg salad sandwiches
Thursday:  Leftover ham with pancakes
Friday:  Chili cheese dogs (a new recipe for me), oven fries
