As usual, we juggled last week's menu plan a bit. We ended up eating all of the dinners I'd listed, but not in that order.
The thin-sliced chicken that I'd breaded and frozen (uncooked) was a great time-saver! After I breaded them, I laid them in a single layer on a sheet of plastic wrap, then folded over the wrap and put the whole thing in a freezer bag. That way the chicken pieces weren't stuck together. I didn't thaw them, but carefully put the pieces into a skillet of hot oil. The breading stuck flawlessly and the results were very good. Next time I see boneless chicken breasts on sale, I plan to stock the freezer with breaded cutlets.
This week we're still working out of the freezer. I'm also planning some dinners to try out the new slow cooker / roaster oven. Here's the plan:
Monday: Slow-cooker chili, sourdough bread
Tuesday: Meatloaf, mashed potatoes, sugar snap peas
Wednesday: Stuffed pepper soup (a new recipe for me)
Thursday: Baked chicken drumsticks, mashed potatoes, corn
Friday: Oven-fried tilapia sandwiches

We have moved dinners around to meet the needs of our changing schedules. There is so much less stress when you already have the ingredients to make several meals and have a flexible attitiude!
Oooh, slow cooker chili! Do you have a recipe for this? I'm always on the look-out for slow cooker recipes . . .

You always have the best recipes! I'm doing good a planning but sticking to days yup that is always toss :)
