Menu Plan Monday

I made a few changes to the plan for last week.  Instead of pork fried rice, I decided to make pork lo mein; I'll post the recipe tomorrow, if you're interested.  And on Friday, my thoughtful husband brought home dinner, so we still haven't had that fish dinner!  It's been on my menu plan for two or three weeks already.  I'm going to try again for this week, but I'm not going with oven-frying this time.

Our freezer is jam-packed, so I'm going to use as much freezer food as possible this week.  Here's the plan:

Monday:  Superchicken, mashed potatoes, celery and carrots w/blue cheese dip
Tuesday:  Not sure, but something quick for a busy day!
Wednesday:  Baked flounder, mashed potatoes, steamed sugar snap peas
Thursday:  Pasta with meatballs
Friday:  Cheese manicotti (from the freezer)

I have thin-sliced chicken, breaded but uncooked, in the freezer, and I plan to use that on Monday.  It's the first time I've tried to freeze it that way, so I hope it turns out well!  If it does, I'll plan to make and freeze larger batches; breading chicken is messy and not fun, so I'd rather get it over with all at once!
