After several weeks away from routine (thank God for holidays and breaks!), I'm back to menu planning. I'm starting to stock the freezer with ready-to-heat meals, but at the moment they're all similar: eggplant parm, eggplant rollantini, and cheese manicotti. So we'll be eating those, about one a week, while I try to get some different (non-cheesy) meals in the freezer.
Monday: Eggplant rollantini (I didn't make this, but this is how it's done) with pasta and bread
Tuesday: Balsamic chicken, baked potatoes, green beans
Wednesday: Chicken-orzo soup (this recipe is new for me) and bread
Thursday: Pizza with pepperoni, peppers, and onions
Friday: Kidney bean soup with ham

ReplyDeleteI am going to have to try that Balsamic Chicken recipe. I wonder if it would convert easily to the crockpot? Ever tried it that way?
