Menu Plan Monday

Last week I think we followed the menu plan almost to the letter.  The only exception was that, instead of using frozen vegetables on Tuesday, we roasted some zucchini with garlic, onion, and tomatoes.  I'll post that recipe tomorrow, so check back if you're interested.

My son helped a lot with this week's plan.  I made a few changes and additions, but three of these entrees are from his list.

Monday:  Pasta with meatballs (from the freezer), homemade french bread
Tuesday:  Sloppy joes, potato salad
Wednesday:  Chicken fajitas (freezer meal - see below), refried beans, fiesta rice
Thursday:  Chicken and broccoli stir-fry, rice
Friday:  Oven-fried flounder (like this), oven fries, veg TBD

I don't remember where I found the recipe for chicken fajitas as a freezer meal, but this is the essence of it.  I cut the raw chicken into strips and added it to a freezer bag containing the fajita marinade.  In a separate bag I stored the cut-up peppers and onions.  I packed a bag of chicken and a bag of vegetables in a Rubbermaid freezer container.  It's not heat-and-eat like some other freezer meals, but (for me) the cutting of meat and vegetables is the most time-consuming part.

    I've always wanted to try one of those freezer meals - where it's all mixed and cut-up, but not actually cooked yet - but never actually done it. Thanks for reminding me of that.

  4. That is an awesome concept... pre-cutting the veggies n chicken. Could you put it frozen in the pan? or defrost it first?
