Menu Plan Monday

Last week we had to do some swapping and juggling with the menu plan, but having a plan was still a tremendous help.  The freezer meals were a big help, too.

We tried one new recipe:  grilled chicken with ginger and cilantro.  (My MPM post from last week lists the ingredients.)  I'd mixed and frozen the marinade, then added it to the chicken about eight hours before cooking.  It smelled wonderful, but my family thought the taste was just okay.  It's low in fat and quite easy to make; I might do it again if I have the ingredients on hand, but I wouldn't go out of my way to make it.

Here's the plan for this week:

Monday:  Lasagna with sausage (I prepared this on Sunday to bake on Monday), bread, salad
Tuesday:  Meatloaf (freezer meal), baked potatoes, veg TBD (from the freezer)
Wednesday:  Eggplant parm (freezer meal), pasta, bread, salad
Thursday:  Kielbasa with sauerkraut, oven fries, veg TBD (from the freezer)
Friday:  Pizza
