That plan included one new-to-me recipe, chicken-orzo soup. I used the recipe as a guideline, but made a few changes. I substituted a long hot pepper (like this - the image is copyrighted so I can't include it here) for the jalapenos; I omitted the tomato; and I used more chicken stock. My family gave mixed reviews to this recipe. I liked the chile-lime-cilantro flavor combination, but DH thought it was just okay. DS declared the soup "yummy," but also said that he prefers regular chicken noodle soup. Leftovers didn't fare so well; the flavors were mild, even bland, and the orzo was mushy. For those reasons, plus the fact that it's more expensive than other soups (I had to purchase the pepper, the cilantro, and the lime), we probably won't make this recipe again. It's too bad: I had high hopes for it!
So after all of that, here's the menu plan for this week:
Monday: Grilled chicken with ginger and cilantro (see below), rice, steamed carrots
Tuesday: Steak, baked potatoes, tomato salad, bread
Wednesday: Pulled pork sandwiches (freezer meal), baked potatoes, vegetable TBD
Thursday: Manicotti (freezer meal), bread
Friday: Hamburgers, oven fries, steamed broccoli

ReplyDeleteThe pulled pork sounds good... we usually buy pulled pork at the Livestock show around March, it's so good! Good luck with ur menu.
ReplyDeleteSounds good! I do grill in the winter except when the grill is covered in snow! We got 24 inches before Christmas and there was no way I was digging it out lol...
