This picture doesn't do justice to the deliciousness of these bar cookies!
I've written before about how much I like snickerdoodles. I was thinking about them last week, but I didn't have the time to roll the dough into balls, roll it in cinnamon sugar, and bake several pans of cookies. So I did a quick internet search for snickerdoodle bars. I'd never heard of anyone doing that, so I was happily surprised to find a few recipes. (I was even more surprised to read that snickerdoodle bars are commonplace, since I'd never heard of them!) I decided to use this recipe, with only one minor change: I omitted the nutmeg.
These bars are super-quick to prepare. They weren't done after the 25-minute baking time, but I don't know how much longer they needed to bake.
The result, though, is wonderful. My husband, who doesn't particularly care for snickerdoodles, said that he likes these more than brownies. The texture is soft, dense, and somewhat chewy. The cinnamon-sugar combination reminds me of snickerdoodles, but the brown sugar gives the cookie a different flavor, a very warm kind of flavor combination.
My husband is already asking when I'll bake these again! They're definitely on our list of Christmas cookies for this year. (The first batch was for an event, so they're already gone.) If you like brown sugar/cinnamon flavors, I encourage you to give these a try!
