I haven't been posting menu plans, because either I haven't been menu-planning or our menus have been boring, quickie dinners. This week I hope to return to my normal routine, so I planned a regular menu. As I looked at the list, I noticed that it has a lot of our favorites and comfort foods. Most of them, though, are healthier versions of the traditional recipes. The stuffing is an exception to that: even with the addition of extra vegetables, the butter content probably disqualifies it as healthy food. :)
Monday: Pasta with broccoli, red pepper, garlic, and olive oil
Tuesday: Eggplant parm, pasta, homemade bread
Wednesday: Chili, homemade bread (left over from Tuesday)
Thursday: Roast chicken, bread/vegetable stuffing, baked sweet potatoes, cranberry sauce
Friday: Leftover chicken -or- chicken soup
