Slow Cooker Garlic Chicken with Potatoes
3 boneless chicken breasts
garlic - about 6 or 8 cloves, sliced
juice of 1/2 lemon (I just happened to have that on hand)
butter - about 1 tablespoon, cut into small pieces (optional)
pepper to taste
water - about 1/2 to 3/4 cup
potatoes - 4 medium, cut into long wedges (optional)
You could use chicken broth instead of water, but I'm always trying to lower my sodium intake. I'd also add more water if I wasn't going to be home to keep an eye on it.Add chicken to slow cooker crock; top with remaining ingredients. I cooked it for 2 hours on High, then 3 hours on Low.
