Monday: Pork roll sandwiches with tomato slices
Tuesday: Pasta with meatless sauce (from the freezer)
Wednesday: Garlic chicken (slow cooker recipe) with potatoes
Thursday: Pork and broccoli stir fry, rice
Friday: I don't have to cook!
The garlic chicken recipe was inspired by Anissa at Our Chaotic Life. I just put boneless chicken in the slow cooker with plenty of garlic (several cloves, sliced), a bit of lemon juice, a little butter, and enough water to keep it from drying out. This time I plan to try cooking potato wedges in the mixture, as well.
