The three summer squash that I picked from the garden weren't enough to make a side dish for the whole family. Instead, I sliced them and made oven-fried summer squash for lunch. This was a quick-and-easy prep: I dipped the slices in water before dredging them in seasoned bread crumbs. I placed them on an oiled toaster-oven pan and baked them in the toaster oven at about 400 degrees until they were done.
These hadn't yet gotten crisp, but we were too hungry to wait!

I like these with a horseradish sauce. I didn't want to open a container of sour cream, though, so I used the grated horseradish straight out of the bottle. Yum!
