Menu Plan Monday - Week of July 6

Last week we tried Kristen's Stuffed Bread, which was delicious; I wrote a whole post about this yesterday, so I won't be redundant. For the chicken fried rice, I ended up winging it instead of using the recipe I linked.

This is a busier week than usual, so we'll be having more quick dinners and slow-cooker dishes. We'll have guests here for dinner on Friday, so I'm planning for real dessert.

Monday: Pasta with meat sauce, homemade "pizza" bread (see below)

Tuesday: Pork roast (in the slow cooker) with potatoes, onions, carrots

Wednesday: Blueberry pancakes with sausage

Thursday: Eggplant parm pizza (with breaded, fried/baked slices of eggplant under the cheese layer)

Friday: Honey basil chicken, rice, broccoli or green beans; lemon squares and brownies (all subject to change!)

"Pizza" bread is a cross between pizza and focaccia bread. I make pizza dough, let it rise, then shape it as for pizza. I let it rise briefly, then brush it with olive oil and sprinkle with garlic powder, basil, pepper, and a little salt before baking.
