Menu Plan Monday - July 20

Last week's meals went pretty much according to plan, except for a bit of juggling days around. This week we're continuing to try to keep up with the cucumbers and squash that are growing in the garden.

Monday: Summer sausage, cucumber salad, pasta salad (a "winging it" recipe with diced squash), steamed green beans, and homemade pickles

Tuesday: Chicken stir-fry, rice, Asian-style pickled zucchini (a new-for-me recipe from How to Cook Everything)

Wednesday: Pasta with meatballs (by special request), cucumber salad

Thursday: Veal parmigiana (with ground veal -- something like this) and pasta

Friday: Superchicken (without the breading), sauteed yellow squash and onions, cucumber salad, baked potatoes

  2. MMM, your menu sounds good! I like the idea of sauteing squash and onions together. I love squash and I hope I have time to grow some next year!
