Marinated Slaw (recipe)

This is based on a recipe I found online years ago, but I've made quite a few changes. My family prefers this over mayo-based cole slaw. Other than the cabbage and onion, the other vegetables can be varied to taste.

Marinated Slaw

1/2 small head cabbage, shredded
1/2 small onion, chopped fine
1/3 large green pepper, chopped
1 medium carrot, grated
1 cucumber, chopped

Dressing:
1/2 cup apple cider vinegar
1/2 cup canola oil
1/4 cup sugar
1/2 tsp. dry mustard
1/2 tsp. celery seed
1/2 tsp. salt

Mix the dressing ingredients in a saucepan and heat to a boil. Stir until sugar is dissolved. (This can be done in the microwave, too.)

Combine the vegetables in a large bowl. Pour dressing over the vegetables, and stir to mix. Refrigerate, stirring occasionally, overnight. Keeps, refrigerated, for several days.

That sounds great! My favorite slaw is the Nutty Coleslaw that is made with Top Ramen, but I have been looking to replace it because the Ramen seasoning packet contains MSG. I am going to give your recipe a try. Thanks for sharing it!
