Cucumber Salad
2 or 3 cucumbers, peeled and sliced thin
about 1 medium onion, sliced thin
2/3 cup water
1/3 cup apple cider vinegar
1 tablespoon sugar
salt and pepper to taste
Layer the cucumber and onion slices in a non-metal bowl. In a separate bowl, combine remaining ingredients; stir until sugar dissolves. Pour over vegetables. Cover and refrigerate for several hours or overnight. Stir occasionally so all vegetables have a chance to absorb the liquid.
Note: I serve this with a slotted spoon, so most of the liquid stays in the bowl. I've found that I can reuse the liquid (once) with fresh cucumbers and onions.

My mom always made this when I was growing up. We had a big garden every year with tons of cukes. This is the best summer salad. Yum :D
