Menu Plan Monday - Week of June 22

Last week I tried two new recipes. I made quite a few changes to the recipe for garlic-roasted crock pot chicken: I sliced the garlic instead of mashing it, I used less butter, and I used water instead of chicken broth. The chicken was falling-apart tender and moist; it fell apart when I lifted it from the slow cooker, but the leftovers made the best chicken salad! I'd make this recipe again.

The new recipe for chicken fajitas is a little more complex than my usual, but I love the make-ahead aspect. The seasonings are mixed with the chicken, peppers, and onions in a zip-lock bag, and the whole mixture is refrigerated for at least 15 minutes. I made it mid-afternoon and let it marinate until dinnertime. It took longer to cook than the recipe indicates--more like 20 minutes instead of six--and it was saucier than the recipe I usually use. I'd make this recipe again, too.

I followed last week's plan for the most part, but had to delay the garlic chicken because the roasting chicken took about three days to thaw!

Here's the plan--no new recipes--for this week.

Monday: oven-fried tilapia, mashed potatoes, green vegetable (from the freezer)
Tuesday: blueberry pancakes, bacon
Wednesday: hamburgers with sauteed peppers and onions, oven fries
Thursday: bean and cheese burritos, fiesta rice
Friday: pork chops with BBQ sauce, mashed potatoes, corn

We were going to have pasta with garlic, olive oil, and broccoli on Tuesday, but the sale on blueberries was too good to pass up!

  1. I just love fajitas. I use all kinds of meats and I'll tell you, the cumin makes all the difference, don't you think.

  8. I love that you, and others, can have a menu plan for the week. I used to do that, but times have changed. I have the stuff for meals, just dont know what day we will have them on.
