Eggplant Parm Ravioli and Eggplant Roll-Ups (Recipe Links)
Last week, while I was sifting through a stack of accumulated magazines, I came across a recipe that I can't wait to try! Eggplant Parm Ravioli was in the Rachael Ray "Everyday" magazine, and it's available on the RR website. The reviews on the website are mixed, but based on the suggestions of the reviewers, I think the recipe can be adjusted easily. I'll try it with wonton wrappers and add extra garlic. Next time eggplant is on sale, I'll let you know how it works out.

OMG I so love eggplant and eggplant parm. If there were not so many calories in it I could eat it every other day....which follows my everyday eating of sushi if I could! LOL Thanks for posting this and dropping in from SITS!! Have a great Saturday fellow SITSa!!
