Eggplant Parm Ravioli and Eggplant Roll-Ups (Recipe Links)

Last week, while I was sifting through a stack of accumulated magazines, I came across a recipe that I can't wait to try! Eggplant Parm Ravioli was in the Rachael Ray "Everyday" magazine, and it's available on the RR website. The reviews on the website are mixed, but based on the suggestions of the reviewers, I think the recipe can be adjusted easily. I'll try it with wonton wrappers and add extra garlic. Next time eggplant is on sale, I'll let you know how it works out.

The same website also has a recipe for Eggplant Roll-Ups, and that's on my "want to try" list as well. We've had something similar at Italian restaurants, and I'd be happy to learn to make it at home.

  2. I have tried the eggplant roll ups recipe and they were very good!! We all really liked it and there were NO leftovers.
