Blueberry Buckle (Coffee Cake) Recipe

Since I have five pints of blueberries in the refrigerator, I'm thinking that it's time to bake a blueberry buckle. I use the recipe from a 1956 Betty Crocker Cookbook. I found some similar recipes online, but since none are exactly the same, I'll share this one.

Blueberry Buckle

For the cake:
3/4 cup sugar
1/4 cup soft butter
1 egg
1/2 cup milk
2 cups sifted flour
2 tsp. baking powder
1/2 tsp. salt
2 cups blueberries, well drained

For the crumb topping:
1/2 cup sugar
1/3 cup flour
1/2 tsp. cinnamon
1/4 cup soft butter

Preheat oven to 375F. Grease and flour a 9-inch square pan.

Make the cake: In large mixing bowl, thoroughly mix the sugar, butter, and egg. Stir in milk, then flour, baking powder, and salt. Carefully fold in the blueberries. Spread batter in prepared pan.

Make the crumb topping: In separate bowl, combine topping ingredients and mix well.

Sprinkle crumb topping over cake batter. Bake 45 to 50 minutes.

    Also, if anyone has a chocolate chip cake recipe where you shave the dark baking chocolate into the batter (not chips), please post that.
