Oven-Fried Tilapia

This is the oven-fried tilapia just before I put it in the oven. (It didn't last long enough after baking for me to get a photo!) I used the recipe as a guideline, and used the ingredients that I had on hand: cornmeal mixed with Italian-style bread crumbs and no added seasoning. I inadvertently set the oven for 350 degrees instead of 400; it worked out perfectly because my husband was late getting home from work, and the fish didn't dry out. I turned the oven up to 400 for the last five or ten minutes, so the breading got crisp.

We had a last-minute appointment, so we made fish sandwiches and had chips (instead of mashed potatoes and green beans). It's safe to say that this recipe is a hit with my family--both those who like fish and the one who doesn't (that's me). And while it wasn't our most frugal dinner, it was inexpensive because we bought all of this fish (two 12-ounce bags of frozen fillets) for just under $4.00.

  4. Were trying tilapia in our menu this month based on this recipe. I'm hoping we all like it because it was fairly inexpensive to buy and much healthier and grown up than fish sticks.
