Last week's menu plan went pretty smoothly. The only change was on Thursday: we had so much spaghetti sauce left over from Tuesday that I used that instead of making the uncooked tomato sauce. Of the two new recipes I tried, one was a winner and the other might work with some changes.
This week my 11-year-old offered to make the menu plan. He relied mostly on what's in the freezer. He planned easy dinners for those days, since we have appointments and don't know exactly what the schedule will be.
Monday: Oven Fried Tilapia sandwiches, macaroni salad (left over), green beans
Tuesday: Pinto bean soup (This might end up being bean burritos, instead.)
Wednesday: Chorizo with peppers and onions on sub rolls
Thursday: Make-your-own sub sandwiches (ham, salami, cheese on sale this week)
Friday: Make-your-own sub sandwiches (with whatever's left from Thursday)
Saturday: Chicken and asparagus stir-fry with rice
