(serves 4)
Adapted from Fresh Ways with Poultry (Healthy Home Cooking)
4 boneless skinless chicken breasts
1 T. vegetable oil
1 T. butter
2 T. honey
1/2 cup chicken stock or water
2 (or more) garlic cloves, thinly sliced
1 t. dried basil
salt and pepper to taste
In skillet, cook chicken in oil and butter until chicken is browned. Place garlic slices on the chicken pieces, drizzle with honey, and sprinkle with basil. Add the chicken stock or water to the pan; cover and cook on medium until chicken is done.
The cookbook suggests serving this dish with steamed carrots and romaine salad. I usually serve it with rice and either steamed carrots or steamed green beans.
