Menu Plan Monday: Week of April 20

Menu planning, for me, is a key to getting dinner on the table every evening. Without planning, I'd be stressed every day, and my family would eat a lot more take-out dinners. My menu plans are based on this week's sales as well as the ingredients we have on hand. So without further ado, I present this week's menu:

Monday: roast chicken, stuffing, fresh tomatoes (frugal notes: I'll make stuffing to use up a loaf of almost-stale bread. Leftover chicken will be used for lunches and in soup.)

Tuesday: eggplant parm (shortcut method) and homemade bread (prep notes: Make chicken stock and start sourdough bread for tomorrow.)

Wednesday: chicken noodle soup, sourdough bread

Thursday: homemade pizza with peppers, onions, and pepperoni

Friday: hot dogs, mashed potatoes, asparagus (note: Sounds like an odd combination, but fresh asparagus is on sale and everyone is asking for it.)

My kids would go wild for the hot dogs and mashed potatoes now the asparagus is another issue (I don't like it at all!). Just wanted to drop a note...I'm new to MPM and blogging.
